Winery Notes:
The Pio Cesare family takes a modern approach to quality winemaking. Their unique method stresses minimal intervention to produce wines of particularly supple flavor expression. A ceaseless devotion to the individuality of each of the region's wines informs Pio's choices in the cellar: shorter maceration, separate lot fermentation, judicious selection for barrel and large cask aging, and bottling schedules determined by the ideal structure of each wine rather by the thirst of the market. This allows Pio Cesare to supply wines of varying weight, agebility, and drinkability as determined by the vineyard rather than the fashion. Year after year, the wines of Pio Cesare are ranked among the world's best. From world-class Barolo and Barbaresco to crisp Cortese and sweet Moscato, the wines of Pio Cesare offer exceptional quality and variety.

Winemaker Notes:
Gavi is made in limited quanitites from Cortese grapes harvested from the hilly vineyards in Gavi. Pio Cesare carefully chooses the vintage time and imposes strict grape selection criteria to ensure the characteristics which give Gavi its unique style. The harvest is completed during the first week of October. The grapes are soft pressed, using checked temperature fermentation, to enhance development of aromas and fresh and fruity characteristics. The wine is bottled during the month of March.

Tasting Notes:
Gavi is a clear straw yellow, with green reflections. The bouquet is intense and ethereal, reminiscent of ripe fruit, green apples and moss. The palate is full and flavourful, yet soft, with a daring hint of green fruit. It is a harmoniously balanced wine.
