Winery Notes:
Pfeffingen is a family winery with a wine making tradition which dates back more then 250 years. Nestled in the midst of beautifully contoured vineyards, they have one goal in mind: Deliver the highest possible quality every year. The unique fossilized limestone soil in their vineyards yields wonderfully balanced Pinot Noir, perfect for the creation of a Blancde Noir. For this white wine made from red grapes only the best, fully-ripe Pinot Noir grapes were picked by hand. Since the old vineyard from which the grapes were harvested is located beside the winery, the grapes could be pressed very quickly. To guarantee the best quality possible the grapes were pressed as whole clusters with only half the pressure of a regular pressing process. As a result the color of the wine is bright and very clear. The juice was then fermented under temperature-control for four weeks. A ft er the fermentation the wine was aged sur lie (on the yeast) for four months. The wine shows lots of fruit flavors, yet is dry, with crisp acidity and great depth; very elegant and harmonious.
