"The 2017 Chablis Villages is a success, exhibiting attractive aromas of lemon oil, yellow orchard fruit and pastry cream. On the palate, it's medium-bodied, with good depth and chewy concentration, underpinned by succulent acids.

After parting ways with Domaine Billaud Simon after some 20 years, Samuel Billaud has established his own state-of-the-art winery in central Chablis, where he is ably vinifying the fruit of some four hectares of estate vineyards, supplemented by purchased grapes. Manual harvesting of ripe but bright fruit is the rule here, followed by fermentation at 16 to 20 degrees Celsius in tank and inconspicuous wood and maturation for 15 to 18 months on the lees for the premiers crus. These are bright, nervy expressions of Chablis with plenty of concentration and length. In a sense, Billaud's evolution as a free agent has followed a similar trajectory to that of Billaud Simon under its new management. Producing classy wines of crystalline purity, this address already belongs on any list of Chablis's best." (WA)

"The 2017 Chablis comes from three parcels, one by Chapelots with small yields, one in La Pargue and one in front of Vaillons from 80-year old vines. It has an elegant bouquet with yellow flowers, citrus lemon and light chalky scents that open nicely in the glass. The palate is very well balanced with a captivating linearity and focus, very taut with a saline finish that gets that old saliva flowing. " (VM)

"An overtly floral-infused nose combines notes of various white orchard fruit with those of sea shore scents. The delicious, round and supple flavors are generous and easy going with just enough depth and persistence to remain interesting. PROFILE:
Part of an esteemed Chablis family, Samuel Billaud struck out on his own in 2009 to found his eponymous domaine. He had previously been the winemaker at Domaine Billaud-Simon, which had been a shining light in the old school Chablis clubhouse of quality. Since the creation of his own label, Samuel has met with great success and moved into a new winery space in 2015 as well as purchasing four hectares of vines that had previously belonged to Domaine Billaud-Simon. The resulting range, from AC to Grand Cru, are layered wines rife with crunchy oyster shell and silex, and exhibit a range of flavor profiles from licorice to white peach to toasty baguette. This is top quality Chablis from a rising star producer – for white Burgundy lovers, these are not to be missed.
