"Lovely gooseberry, kiwifruit and elderflower notes form the core, while sea salt accents run along the edges. Shows a slight grip on the finish, adding to the texture and complexity. Drink now through 2025. 700 cases made, 70 cases imported. -AZ" (WS)

"This top wine in the Bourgeois range is made for aging. Its perfumed apple and citrus fruit and concentrated texture have now blended well together to give a balanced, mature wine. Impressive in its density and richness, it is ready to drink now. -Roger Voss" (WE)

Winery Notes:
100% Sauvignon Blanc

This cuvée comes from soils of kimmeridgian marls, recognizable for clusters of comma shaped small fossilized oyster shells (ostrea virgula) from the slopes of Chavignol.

After pressing, the juice is allowed 2 days of natural clarification by sedimentation. Fermentation occurs in both barrel and tank for complexity. The wine is racked and bottled in accordance with the lunar cycle.
