Winery Notes:
When Jean-Marc decided to set up as a winemaker in 1987, he rented a cellar in the center of the village. "At first, I vinified in the open. It was necessary to develop everything. The friends went to see me. The cellar had no roof, it was funny. But not very practical, and not at all standards! ". But it takes more to discourage the one who then discovered a passion for wine and wine-making. "It did not come right away. Initially, I learned by observing winemakers and oenologists. One day, it fell on me and it never left me anymore.

Today, Jean-Marc unhesitatingly claims the status of business leader. At the head of the winery he finally built in 1999, he combines all the trades: winemaker in his vineyards, winemaker in the cellar, manager of the company, commercial on the roads and ... boss. At start-up, the wines were sold in bulk to the trade. Then Jean-Marc decides to develop the bottle sale. He takes his commercial cap, participates in many salons, presents his wines in competitions, in which they are regularly medalists. And is thus gradually forming a loyal clientele, all over the world. Including China and New Zealand.

One of the peculiarities of the estate is also to have developed vintages of terroirs, relying on its very fragmented configuration. Jean-Marc offers a range of Rasteau dry red, with different styles. By working provenances and assemblages, after long hours spent in the cellar to test different types of wines. Rather light, when he plays on seduction or much more powerful, when he vinifies grapes from old vines planted on the slopes. Thus, the vintage "Florianaëlle" in RASTEAU magnifies the Grenache, on notes finely wooded, while its cuvée "Saint-Martin" is rather intended for the amateurs of Syrah.

Tasting Notes:
Dark purple with bright reflections with aromas of clean, elegant, and very fruity with notes of macerated black fruits and spices. Round and well-structured with hints of cherry mixed with sweet spice. Full-bodied and rich on the palate.

Food Pairings:
Exceptionally well with red meats and dishes such as roasted veal with morel mushrooms, herb-crusted ribs and cheeses.

Varietals:
Majority Grenache, with the rest made up of Syrah and Cinsault. Percentages of each varietal will vary by vintage

Soil:
Combination of sand and clay garrigue with red-colored topsoil and small stones

Harvest:
100% manual harvest with sorting done both on the vine and at the cellar

Vinification:
after being passed through de-stemming machine, the grapes are added to tanks where the temperature is closely monitored throughout the fermentation, which lasts several weeks. Pumping-over and some gentle punching-down take place in order to preserve the wine?s fruit and suppleness.

Ageing:
100 % in tank
