70% Merlot, 20% Cabernet Franc, 10% Cabernet Sauvigon

"A round and juicy red with berry and chocolate character, chewy tannins and a flavorful finish. Medium to full body. Needs a year or two to soften. Try in 2020." (JS)

"Located to the west of Castillon-la-Bataille, this vineyard is close in geography and style to Saint-Émilion. It delivers a rich texture from the ripe Merlot as well as generous, warm berry fruits. At the same time, the wine has a light touch of acidity and a crisp aftertaste. Drink this poised wine from 2021." (WE)

Winery Notes:
Château Hyot has such pretty aromas of dark cherries, plums, spices and smoke with mildly earthy characteristics. The wine possesses a medium to full body and is well balanced showing lovely mix of fruit and acidity. Wonderful flavors of plums, spices and fresh spring florals continue to persist all the way through the finish. A blend of 70% Merlot, 20% Cabernet Franc and 10% Cabernet Sauvignon made from vines averaging 40 years planted in gravel and clay-limestone soils, all of the grapes are harvested by hand. Winemaker Amélie Aubert seeks a terroir-driven wine, combining sophisticated structure with balance and freshness. A deep respect for the vine is the driving force behind her philosophy and approach to making wine. "Quality is not possible with quantity", she explains, "and I want my wine to capture the essence of this fantastic terroir in its moderate oceanic climate."
