Winery Notes:
A historically cool summer allowed Rosemary's Block to hang longer than it ever has before. Harvested October 16th, more than a week after we have ever picked Rosemary's Block in the past. The cool climate of Dry Stack Vineyard lets the grapes ripen slowly and Rosemary's Block heavy soil limits Sauvignon Blanc's typical vigor. This reduced vigor and slow ripening allows the fruit to develop intense tropical flavors of Passion Fruit, Pineapple and Guava while developing this wine's signature mouth feel and long finish. In the winery, we fermented in 100% stainless steel and then aged the wine for 3 months in 50% stainless steel and 50% mostly neutral French oak. Bottled unfined unfiltered to preserve its fresh character, this wine may throw a slight haze and should be kept cool and consumed in the next 12 months. 1000 Cases produced pH 3.22 Alc 14.4 TA .7 Coast.
