85% Cabernet Sauvignon; 9% Syrah; 4% Merlot and 2% Carmenère.

Color: Deep red with dark purple hints.

Intense and expressive nose with garnet and fresh red fruit, but yet elegant with subtle sweet spiced from a well integrated oak.

Intense mouth feel with a broad tannic structure, lingering towards fresh red fruit flavors. A concentrated body, which will enable a long bottle ageing.

Service and Food Pairing:
Cellar for several years or decant and serve at 16-18°C (60 to 65°F). Ideal companion for meats and elaborate dishes.

The fall – winter 2009, with the exception of June, was much drier and cooler than usual with about 30% less rainfall in our vineyards. September was also cold, so bud break happened a bit later than the prior season. The spring showed normal amounts of rainfall but with very low temperatures. These cold conditions disturbed the pollination and naturally lowered the yields. Fortunately, during second half of December the normal sunny conditions returned. At that point the plants had from 8 to 10 days of delay in their development. Summer brought us cool nights preserving the grapes freshness and inducing the concentration of aromas. Summer also brought the 5th biggest world earthquake ever recorded, so the few days delay of the crop were a blessing in order to organize the winery and get ready to crush the grapes.

Our Cabernet Sauvignon comes from an old block of Cabernet: planted in 1920 with high density in special soil and geographic conditions. Our winemaking philosophy remains very natural and we adhere to minimal intervention. Our key points are 100% hand harvesting, strict fruit selection by 89% optical state of the art grape selection and 11% hand destemming of the grapes at our Clos Apalta Winery. All fermentations were made with wild yeast. There is no stabilization, no clarification and a very light filtration prior to bottling. The 2010 vintage brought us very good structure and fruit concentration on this exceptional Cabernet Sauvignon.
