80% stainless steel 20% neutral French oak barrels

Fossil Point Chardonnay is designed to showcase the bright natural acidity and fresh fruit character of our estate vineyard, which is located in the western Edna Valley less than five miles from the Pacific Ocean. The grapes are whole-cluster pressed, then cold fermented in stainless steel tanks and neutral French oak barrels to foster a fruit-forward profile.

A very clean malolactic fermentation was conducted in several lots to moderate the naturally high acidity, and we performed battonage, (lees stirring,) several times weekly throughout the wine’s elevage in order to richen the wine’s palate and to protect it from oxidation.

TASTING AND PAIRING NOTES:
The 2009 vintage greets you with lively citrus zest and Asian pear aromas. On the palate, the wine shows hints of creaminess while finishing with balanced crispness, making it a versatile match for many dishes. Recommended pairings include oysters, black cod, and Dungeness crab all of which inhabit our local shores and belong to healthy fisheries.

In the Edna Valley on California’s Central Coast, our vines are never far from the influence of the sea. Sunny afternoons yield daily to brisk marine breezes, and the growing season is directly shaped by the seasonal flow of the currents and surface temperature of the nearby Pacific Ocean. Even our soils of calcareous shale and coarse sand were uplifted from the ancient ocean floor and weathered into place over the millennia.

Fossil Point pays tribute to this bond between sea and vine. Located less than five miles due west of our estate vineyard, Fossil Point is a rugged headland with sweeping views of the coastline from Port San Luis to the Guadalupe dunes. Standing on Fossil Point, you can enjoy the same ocean breezes that are on their way to our vineyard, where they will guide our fruit to perfect ripeness.
