Winery Notes:
The Wine
Our 2007 Cuvée displays aromatics of raspberry, chocolate, smoke and vanilla. It explodes in the mid palate and has a long finish that reminds us of berries covered in cherry liquor. This wine has a pleasant contemporary palate with a little introduction into some classic old world flavors. Pair this wine with lightly grilled mango chutney stuffed pork chops or Blackened Salmon.

The Winemaking
Fermented separately and blended after partial barrel aging, this wine was carefully constructed to match the individual strengths of each varietal. The modern techniques of cold soaking the grapes prior to fermentation and a slow cool fermentation rate, insured the maximum extractions of color and the preservation of fruit flavors without the over extraction of bitter tannins from the skins and seeds.Fermented in open top tanks punched down 4 times daily to optimize bright fruit. Barrel aged in 50% new American oak for 18 months.

The Vineyard
The vineyards that go into our Cuvée come from Vineyards in Mendocino. JMR and Conrado Vineyards in Mendocino are planted on western facing hillsides. They get plenty of afternoon sun that pushes ripeness to a level that is new to Trinitas. The grapes for this wine come from Mendocino County, north of Napa. Winemaker Kevin Mills says he likes the grapes from this region because of the ripeness that comes from the long growing season. "The Indian summers never seem to fail me," he says. He says the grapes from the Conrado Vineyard are "all strawberry preserves, while the JMR vineyard shows more dark fruit, blackberry, plum and a touch of classic zinfandel briar notes. I think the wine is delicious."
