Winery Notes:
Wine
Decadent dark-fruit aromas open our 2007 Reserve Cabernet Sauvignon. Fragrant spices lift through layers of dark cherries and black cassis, developing an intense perfume of licorice, cocoa powder and black pepper when swirled. With great length and breadth, the fruit spans across the broad palate, matched by espresso, vanilla, and anise. The tannins are dense and fleshy, effortlessly supporting the rich, full body and suggesting a long life.

Vineyard
Each year, we select the best fruit from a variety of vineyards in Napa Valley to create a well-balanced wine that is the ultimate expression of the vintage. In 2007, a majority of the grapes came from three regions: Yountville, Diamond Mountain and Rutherford. The cooler vineyards in Yountville provided fruit with intense color and tight structure. Diamond Mountain grapes brought aromatics, fleshiness and weight, and the Rutherford fruit smoothed the edges with its soft, supple, rounded flavors.

Winemaking
A beautiful vintage, 2007 gave us amazing fruit, with intense flavors and supple, sensuous tannins. “Our job,” explains Winemaker Mike Westrick, “was to showcase the gift Mother Nature gave us, creating a structural frame around an already well-developed painting.” Small lots were fermented individually with regular pump-overs to gently extract the depth of character from each site. When fermentation and aging were complete, we evaluated each lot and blended the individual pieces together into a harmonious whole that shows bold flavors up front and a healthy structure and big backbone, ideal for aging.

Vintage
The 2007 vintage was textbook perfect. Low winter rainfall and a warm spring resulted in early budbreak. Moderate temperatures throughout the growing season allowed the grapes to hang as long as they needed to in order to develop full phenolic ripeness and maturity. The resulting fruit showed intense flavors and aromas, balanced by good acids and supple tannins.
