"A fresh and elegant Champagne, with a light, pleasing plushness to the mousse. This weaves subtle notes of fleshy mirabelle plum and nectarine fruit, preserved lemon and pastry dough with a chalky, minerally underpin- ning that lingers on the finish. Drink now through 2028. -A.N" (WS)

"There are pure chalk and lemon juice notes intertwined with perfectly ripe, sunny white and yellow-fleshed fruit expressions (even hints of pineapples) on the bright, fresh, subtle but most of all highly elegant and nobly expressive nose. Altogether, that makes the 2007 Blanc de Blancs Le Mesnil Brut an outstanding Salon that already shows its class without any reservation but also without any compromises to its refined and terroir-driven style. Compared to the powerful and structured 2006 that, from my memories, showed wet chalk flavors but almost no fruit in its youth, the weightless and delicate 2007 is a coolish, elegant and smoky gentleman dressed in a white tie and silk hat—Max Raabe singing Berlin chansons from the 1920s! The performance on the palate is pure yet concentrated, fresh and linear, very elegant and perfectly balanced, but most of all, it is extremely fine and stimulating! There is a chalky-dusty texture in the aftertaste that makes this a great Salon with sublime finesse and elegance. Lovely lemon flavors are displayed on the pure, fresh and concentrated finish. The radiant 2007 Salon is one of the greatest champagnes I have had from this vintage. 57,000 bottles produced. Tasted from lot L93 SQ 28218 U in November 2018.

Salon and Delamotte, which both belong to the Laurent Perrier Group, have released new vintages this year, and I managed to taste them only now, in autumn 2018. The 2007 Salon is a weightless, highly finessed and elegant Blanc de Blancs from Le Mesnil, while the 2008 Delamotte Blanc de Blancs is a very charming Côte des Blancs from a great vintage. The late disgorgement of the 1997 Salon (which spent nearly 20 years on the lees) combines the elegance and finesse of the house style with the vinous complexity of a matured Champagne. The vintage benefited from the slow-ripening conditions afforded by the late season. The supremely elegant nose has a dazzling array of scents ranging from herbs, spices, and flowers to pineapple and pear. The attack is power-driven, but a backbone of racy acidity brings vivacity and propels the wine to a weightless, airy finish. Not as dense as many Salon Champagnes, but this remains a singular and impeccably elegant vintage. Best to be patient for another 15 years. Salon is a unique Champagne. All the emphasis in the production of this exceptional wine is on the singular. It was originally the product of one single man, Aimé Salon; from one single region, the Côte de Blancs; from one single cru, le Mesnil-sur-Oger; from one single grape variety, Chardonnay; and from one single vintage, with no blending whatsoever.

Created in 1911 with first vintage 1905, Champagne Salon is the creation of one man, a champagne connoisseur enchanted then seduced by the terroir of Le Mesnil.

At the beginning of the 20th century he just created the Blanc de Blancs. The first known vintage was 1905. Now that the tragedy of the war was over, he was encouraged by his numerous friends to profit more fully from his wine and the house of Salon was created, to cater for his new clientele.

This Champagne is produced from a one-hectare parcel owned by Salon: Salon’s garden, and from 19 other smaller parcels in Mesnil-sur-Oger, chosen by Aimé Salon at the beginning of the century.

The wines are cellared in the bottle for an average of 10 years, gaining in complexity and finesse.

The proof that memory and history are important is shown by the bottles in the cellars from nearly all the vintages that have ever been produced at Salon.

Headed by Aimé Salon until his death in 1943, the house was then left to his nephew. In 1988, Champagne Laurent-Perrier, a family-owned company, became the majority shareholder of Champagne Salon.

Today, the house of Salon, along with its ancient neighbour and sister, Champagne Delamotte (the fifth oldest Champagne house, founded in 1760) are directed by one man, Didier Depond.
