2016 WINE SPECTATOR TOP 100: #94

"This is delicate, featuring lemon, herb and stone flavors lifted by the fine acidity. Touches of seashore and oyster shell add depth as this coasts to a clean finish. Drink now through 2018. 4,000 cases imported. –BS " (WS)

"The 2014 Chablis from the Domaine comes from Fevre's own grapes and sees 5 to 10% raised in used oak for 4 to 6 months before blending in tank. It has a lifted, fresh Granny Smith apple and dewy-lawn nose that is well defined and precise. The palate is crisp and fresh with a fine line of acidity, that judicious use of oak just filling in the gaps, taking away some of the severity that would have been on the finish. As such, it is an approachable Chablis, fizzing with freshness and tension." (WA)

"(bottled last June): Oyster-shell reduction and a note of lime on the classic Chablis nose. Dense, juicy and firm, boasting excellent definition to its flavors of oyster shell, lime and white flowers. Penetrating but not aggressive in spite of its firm acidity, finishing with excellent subtle length and grip. This terrific village wine is an exceptional value--but make sure you get the Domaine bottling." (VM)

"This wine has simple fruit with fresh acidity, touches of lemon and a crisp, tangy texture. Still young, it offers a flinty edge and a steely aftertaste, both of which will merge into the apple and grapefruit flavors over the next few months. Drink from 2016." (WE)

"A cool, pure and slightly more elegant nose speaks of citrus, oyster shell, white flowers and iodine hints. There is excellent volume for a villages level wine with very good mid-palate concentration present on the medium-bodied flavors that conclude in a citrusy, clean and very dry finale. I very much like the delivery and this too will need at least a year or two of bottle age first. Recommended as overall, this delivers very fine quality." (BH)

THE 2014 CHABLIS OF FEVRE IS A CRISP, APPEALING CHARDONNAY WINNER FOR $25.95 2014 CHABLIS. Estate Btld. DOMAINE WILLIAM FEVRE

I’ve long been a fan of the Chablis wines of William Fevre both under the present owners as well as when William Fevre owned it himself. There was a difference in style in that when Fevre was the owner he was known (and sometimes criticized) for using a bit too much oak aging).

I was astonished as soon as I tasted this 2014 Chablis with its noticeable depth of flavor, the kind I would expect from a more costly Premier Cru. What also impressed my about this 100% Chardonnay wine is its terrific appealing acid level that allows it to be such an ideal companion with all types of white wine oriented cuisine.

Neal Martin, Parkers Burgundy reviewer has given this wine a perfect description, when he rates it an 89 and writes, “The 2014 Chablis from the Domaine comes from Fevre's own grapes and sees 5 to 10% raised in used oak for 4 to 6 months before blending in tank. It has a light fresh Granny Smith apple and dewy-lawn nose that is well defined and precise. The palate is crisp and fresh with a fine line of acidity, that judicious use of oak just filling in the gaps, taking away some of the severity that would have been on the finish. As such, it is an approachable Chablis, fizzing with freshness and tension.”

All I would add it that I would add to the Green Apple taste the mild addition of fresh pineapple and rate it definitely a few points higher.
