This wine has an attractive rose color with subtle bead-of-light bubbles.
It has a very delicate nose with scents of raspberry and fresh flowers.
In the mouth it is very pleasant and fruity showing peach notes. It is both
balanced and rich in texture.
Produced and bottled in the Limoux region's upper valley, situated in the
foothills of the Pyrénées, Sud de France.
70% Chardonnay, 20% Chenin Blanc and 10% Pinot Noir.
Clay and chalk dominate the vineyards' terraces, which are situated on steep slopes
at a low altitude, about1/4 mile above sea level. The climate here is temperate,
allowing a slower maturity of the grapes. This allows for a maximum development
of their aromatic and flavor potential.
The pruning style is short (Guyot pruning system). All vines are hand-picked.
Extremely low yields, from a selection of the most ancient vines which are
controlled by the pruning style. This ensures maximum quality of the grapes.
The harvest is de-stemmed and pressed slowly. Racking of the must takes place
for12 to 24 hours. Yeast is added to induce the fermentation. Then the wine
undergoes a second fermentation in the bottle. This development and ageing last
for at least 9 months.
