The grapes harvested manually are crushed within the following two hours. Crushing is done by means of a winepress which first separates the grape stalk from the grapes. The crushed grapes are then placed in a glass cement fermentation container and cooled with thermal exchange plates. This type of container prevents sudden thermal stress.
The Montepulciano vine comes originally from Valle Peligna. This information has been confirmed by the historian Michele Troia with an eighteenth century document therefore much earlier than the boasted Tuscan origins. In this area the vine has undergone selections and it easily adapted to the environmental changes following its spreading in the neighbouring territories and mainly in the Abruzzo region.
The name of this wine has absolutely no connection to the Nobile di Montepulciano wine and the homonymy is purely casual. The latter in fact, derives its name from the town in which it is produced while the one from Abruzzo derives from the vine which determines the characteristics of the grapes.
